Looking for your new favorite late night snack when you are craving something sweet? This brownie is so rich and gooey, and quite simple to make, and it cooks in just one minute! It is also a great way to get a little more protein and fiber in for the day. If you are not vegan or dairy free, you can use regular whey protein, chocolate chips, and chocolate hazelnut spread.
I like to use Alani Nu protein, it is a pea, pumpkin seed and watermelon seed mix that is nice and smooth, not grainy. I also like to use Enjoy Life chocolate chips which are dairy free. And lastly, Nutiva dairy free chocolate hazelnut spread I found on Amazon to replace Nutella which contains milk. You can use other brands and any kind of nut butter you would like, these are just the ones I use and love. However just note, some plant proteins may contain too much fiber and won't cook.
In a bowl or mug start by adding all the dry ingredients and mix together. Then add the wet ingredients and stir until you have a batter. Lastly, fold in the chocolate chips.
The batter will be thick, it should look like this:
Top with additional chocolate chips and cook in the microwave for one minute or until the center is cooked.
Ingredients
[Serves 1]
Dry
1/2 scoop of chocolate vegan protein (I used Alani Nu, you can also use vanilla)
1 Tbsp almond flour
1 Tbsp oat flour
1 Tbsp cocoa powder
Pinch of salt
Wet
1/2 Tbsp dairy free chocolate hazelnut spread or nut butter of your choice (I use Nutiva found on Amazon)
1 tsp honey or real maple syrup
1 tsp vanilla extract
1/4 cup unsweetened almond milk (or dairy free milk of your choice)
1 Tbsp dairy free mini chocolate chips (I use Enjoy Life semi-sweet)
*If you are not vegan or dairy free, you can use regular whey protein, chocolate chips, and chocolate hazelnut spread
Directions
First add all your dry ingredients except chocolate chips to a mug or bowl and mix well with a fork.
Next add all your wet ingredients directly into the dry.
Mix the wet and dry together well until it forms a thick, sticky batter. Make sure to scrape the bottom and sides.
Now add the chocolate chips and fold in.
Sprinkle on a couple more chocolate chips.
Cook in the microwave for 1 minute, or until the middle is cooked. Your brownie will be hot and gooey, so let it cool just a few minutes. Enjoy your less guilt treat!
