This cookie dough is the perfect late night snack when you are craving something sweet. It is made with just a few ingredients and it is a much healthier option than your typical cookie dough. If you love to eat cookie dough out of the bowl while you make cookies, this is the recipe for you! All the ingredients just mix up in a bowl, no need for a blender for this recipe!
Sunflower butter is my secret ingredient in this recipe to create that sticky dough texture. With sunflower butter you are still able to keep that authentic cookie dough flavor. You can certainly use peanut butter or any other nut or seed butter, but the flavor will change slightly.
Enjoy right away or keep in the fridge for later!
Ingredients
[Serves 1]
2 Tbsp gluten free oat flour packed
2 Tbsp almond flour or substitute for coconut flour for a tree nut free option*
Pinch of salt
Drop of vanilla extract
1 Tbsp sunflower butter (or other nut or seed butter of choice, just make sure it is runny)
1 Tbsp pure maple syrup (or honey)
1-2 Tbsp dairy free chocolate chips (I suggest using mini chips)
*If you are using coconut flour, add just a touch of your favorite dairy free milk until it is the consistency you desire. I recommend the almond flour for best results if you can have tree nuts.
Directions
Add all your dry ingredients except chocolate chips to a bowl. Stir until everything is fully mixed.
Now add your drop of vanilla. The exact amount doesn't matter, you just don't want a lot because it will add liquid.
Next add your sunflower butter and maple syrup.
Mix and mash everything together until a dough batter forms, make sure to get all the dry mixed in.
Now add the amount of chocolate chips you would like, and fold in.
Enjoy right away or store in the fridge for later.
