This rice is just like the tasty Mexican style restaurant rice, it has a touch of heat and tastes great with tacos, burritos, and enchiladas. This recipe is made using a pressure cooker, making it fast and easy!
You can use either tomato paste or tomato sauce for this recipe, with the addition of a few seasonings.
Garnish with cilantro.
Ingredients
Rice
2 cups jasmine rice (or favorite white rice)
2 cups water
Seasoning
1 tsp chili powder
1 tsp cumin
2 tsp salt
1 tsp garlic powder
1 - 8 ounce can tomato sauce*
*Or a 6 ounce can tomato paste plus 1/4 cup water
Optional
Chopped cilantro
Directions
Make rice according to the directions or use my Pressure Cooker Rice Method.
While the rice cooks, whisk together the tomato sauce (or tomato paste and water) and seasonings. Mix until smooth.
When the rice is done, turn off the heat and pour over the sauce and mix.
Garnish with cilantro and enjoy! Eat within 3 days and reheat in microwave with a damp paper towel.
