Collagen Cookie Dough Bites (No Flour, No Bake, Gluten Free, Dairy Free, High Protein)

Collagen Cookie Dough Flour Free


This is about to become your favorite simple snack recipe! How can you go wrong with cookie dough?! No flour is needed for these bites, just a few simple ingredients including collagen for a little boost of protein in your day.


What you will need:

  • Runny nut or seed butter

  • Real maple syrup

  • PB2

  • Collagen Powder

  • Vanilla

  • Salt

  • Chocolate Chips




You can find powdered almond butter (aka fine almond flour) which can replace the powdered peanut butter. For the collagen, I like to use Bulletproof brand but any others should work as long as it is pure collagen.



You can easily substitute any type of nut or seed butter for the peanut butter, just make sure it is runny.



Grab a medium bowl and add your wet ingredients, mix them until smooth. Then add your dry ingredients except the chocolate chips, then mix and fold them in until you have no dry left and your dough is formed. Lastly, add your chocolate chips and fold them in until fully incorporated.



Mix, mix, mix until no dry ingredients are left.



Using a cookie scoop or tablespoon, scoop out 14 even sized balls.



Roll the balls in your hands until smooth. Store in an airtight container in the fridge to keep longer, but they do not need to be refrigerated.



 

Ingredients

[Makes 14 bites]

Wet

1/2 cup runny peanut butter (or nut or seed butter of choice)

1/4 cup + 2 Tbsp real maple syrup

1/2 tsp vanilla


Dry

1/2 cup unflavored collagen powder (I use Bulletproof or Dose & Co)

1/2 cup PB2 or other brand powdered peanut or almond butter

1/4 cup mini chocolate chips (dairy free if needed)

1/2 tsp salt*


Directions

  1. First measure out your wet ingredients and add them to a medium bowl. Stir with a spatula until well combined.

  2. Next add all your dry ingredients EXCEPT your chocolate chips. Then using a stiff spatula or spoon mix all your ingredients together until you form a dough. If after mixing in all the dry ingredients it still looks a little dry and not sticky, add a touch more of maple syrup and mix in well.

  3. Now add your chocolate chips and fold in.

  4. Using a small cookie scoop or tablespoon, scoop 14 same sized balls and roll them in your hands to make them smooth.

  5. Store on the counter for a few days or in the fridge for about one week.
