This dressing is just four simple ingredients. It is creamy and adds just the right amount of flavor to your favorite taco. Just add it to cabbage and pair with your favorite protein for the perfect soft shell tacos.
Start by prepping all your fresh ingredients. Rinse and dry your cilantro, juice your limes and remove the pit and skin form your avocados. Then, add them all to your food processor.
No need to chop the cilantro, use the stems and all. The stems actually have a lot of flavor in them.
Make sure to use ripe, soft avocados. One of mine was on the harder side so I had a few chunks. Ripe avocados are best for the perfect smooth and creamy consistency.
Blend all the ingredients in the food processor until smooth, you will need to scrape the sides a few times to make sure you get all the chunks and cilantro incorporated.
Add about 1/3 to 1/2 of the dressing to an 8 ounce bag of cabbage, or to taste.
This cabbage tastes great with all kinds of tacos; chicken, fish, pork, shrimp, or shredded beef. My personal favorites are fish and shredded pork tacos.
2 ripe avocados
Juice of 1 large lime or about 2 Tbsp lime concentrate
1 cup fresh cilantro stems and all
1/2 tsp salt
8 ounce bag of cabbage
Start by cutting your avocados in half then remove the pits and peel off the skin. Then add the halves to your food processor.
Next, rinse the cilantro and pat it dry with paper towels. Then, measure out one cup, stems and all. Add to your food processor.
Next juice the lime and then add the juice to the food processor as well.
Lastly, add your salt.
Blend everything together until smooth, you will need to scrape the sides and bottom a few times to get all the chunks blended.
Add about 1/3 to 1/2 of the dressing to an 8 ounce bag of coleslaw cabbage, or to taste.
Tastes great on soft shell tacos with any of your favorite proteins. Eat within a few days.
